Favorite Fall Recipe

I checked another fall activity off the list. We made #pumpkinbread! It was my first time baking anything besides boxed brownies (which I ruined). It was so easy to make that I will probably do it again. It has been two days, and one loaf is gone. So, I guess you could say it was a hit with the boys. I let Blake try some too. That was a mistake because she tried to lunge out of my arms for it after that and I almost dropped her.

This is the recipe I used. Beware, it's not exactly paleo (or any other diet) friendly.


3 1/2 cups all purpose flour

3 cups sugar

2 teaspoons baking soda

1/2 teaspoon salt

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/4 teaspoon ground cloves

2 1/2 cups canned pumpkin

4 large eggs

2/3 cup water

1/2 cup vegetable oil

(We added a small bag of chocolate chips- you know just to make it as healthy as possible)


Preheat oven to 350 degrees

Use two 9-inch loaf pans and spray with cooking spray

In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves

In a medium bowl, whisk together pumpkin, eggs, water, and vegetable oil

Combine pumpkin mixture and flour mixture until well combined

Bake for 45 minutes or until wooden pick inserted in center comes out clean

Let cool in pans for 10 minutes

Remove from pans, and let cool completely on a wire rack

Tip: Unless you have some kind of magic oven that defies the laws of physics it is going to take longer than 45 minutes. I don't know exactly how long we ended up cooking it but it was at least an hour.
